As for skiing, lots of ski areas within 1 hour of Seattle or bellevue proper -- Snoqualmie summit, stevens, crystal are pretty hopping.
Other than that, lots of stuff to do here, however invest in a gore-tex jacket, headlamp and some rain gear for biking.
I know Fiorinis (local ski shop) has a ski bus that takes adults up on Saturdays and one night a week for lessons, you could contact Fiorini Sports to find out if they have space on the bus for you. They are located near the University of Washington, so their pick up areas are probably north of downtown.
Lots of good places to eat in Seattle. I'm partial to Cafe Campagne, Tulios, El puerco Lloron, Macrina when downtown. Lots of great places up near Capitol Hill and Queen Anne too.
