The "sweet and savory snacks" available in between is just some stuff they leave out in the galley. Usually on par with the domestic FC snack basket, but a little different I think depending on what kinds of snack food is available/catered at int'l stations. There's usually some fruit, too.

And IIRC, the purser will come around before pushback and ask for your entree order. Unless you do the dine & rest option, it's assumed you'll be getting all the starters. I've been lucky to also have FAs that offer a drink choice with the starters and then offer/suggest a different drink with the entree, and yet another with dessert.
Yes, from what I can gather, it looks like now they hand you a menu as you sit, but I'm unsure when exactly they take your order. I'm burning my miles for our first anniversary, so I wanted to get the most out of them I could. Turns out it was a R/T to AMS. It'll be on the A333, so I'm excited to have the full lie flat. We're somewhere in the middle, like 3A and 4A, because it sounds like they start with 1A for orders, but when they bring out the food they start serving row 9 first. So we can get the first stab at ordering, but aren't dead last to be served.

I can't sleep on planes (though a flat seat helps), and since the flight to AMS is a combo day/night flight, and especially since the return is a day flight, it's nice to know there is something to munch on, even if it's just a typical snack basket. When we came back from our honeymoon, we were in J on AF; there was supposed to be some sort of snack station (sounded like similar to B6's setup), but all I saw were these small cups of a sorbet-like thing. I grabbed a few, but they ended up serving them later anyway.
