If I purchase a first class fare (or really any that is listed that you get a bonus) do the bonus miles count toward status?

I understand that elite bonuses don't count toward status, but was thinking a fare class bonus would.

Also, it says as an MVP Gold 75k I can cancel my ticket at anytime without a penalty, correct? What about if I just need to change the day of the flight (or a different time that day), if the same fare class is available can I make that switch without a fee?

One more question, is there a place that gives the basic overview on how fares work? I am talking about buying the lowest vs an upgradable vs first class and what the differences are. I think I understand, but sure there is more there than I know!
