Call in and ask what the meal selections will be on your LHR-ORD flight and see if any of the options work for you. If they do, preorder that. If they don't, then order a vegetarian special meal (which yes unfortunately will probably also be a vegan meal, and a bland meal, etc as AA seems to try and make their special meals fit as many special meal categories as possible).
