That's true but the decoded bar code would not match the BP. You could also edit the flight number or the line number but again the bar code would not match.
If you hand the security screeners a paper boarding pass they only appear to be concerned with matching the name on the BP to the name on your ID. I've never seen them scan a paper BP and then match the name to what's on their BP monitor display.
I've heard of people doing this on legacy carriers to get elite status. They'll book a trip for a friend or family member using their name/FF# and change the name on the BP to the person flying. It's risky in an IRROPS situation or if they need to reprint the BP at the airport.
