And what do you mean by "hand flying"? Are you talking about working the stick and rudder while following the FD command bars, or using just raw data? If it's by the FD, it's still technically hand flying but I bet I could get you into a sim and within 30 minutes have you competently hand flying an approach. Also, are we talking autothrottle on or off?

I really doubt an airline pilot with 200+ passengers would deliberately turn off systems just for the purpose of getting some practice during the highest workload phase of a flight.
You'll have to ask the FTer who told me this. It's been shared to me that this is how AC tells their pilots to fly.

I'm just sharing here that a 767 AC captain told me they do not when they don't have to and there is no mandate for them to "hand fly", whatever that means. fwiw
