The UK and Amsterdam are two place I can comment on with personal experience. A single does mean a single bed for one person, a twin will be two twin(single)beds and a double will be a double or queen size bed for two people. There are very few king size beds in the UK hotels you will likely get a double or at best a queen size bed. So if you need two beds or one bed for two people make sure and specify that there are two people in the room. You might can book a single room rate and get a bigger bed but it's not guaranteed.
