If going to Singapore, I'd take China Air's new 777-300ER which definitely flies JFK-TPE (Taipei) and I think LAX or SF as well. The business class is very stylish and I hear ok things about coach too.

Taipei is a good connecting point for SE Asia but not as much Japan. If flying to Japan I'd stick to Delta metal non-stop or KE (Korean Air).
