Chiang Mai's become a bit of a dump. You'll have to sift through an awful lot of dross to get value. There are certainly interesting places to see around the city, but it would be easy to get sucked into badly regulated activities and cruelty like playtime with heavily tranquilised tigers.

Siem Reap/Angkor is something you might consider.
