So, do any of you know if there is a way to assure that I'm not downgraded to non-MCE seats when flights are changed in cases when MCE seats are available?

There is no rhyme or reason to the seating assignments whenever there is equipment changes. As for the non notification, I cant say, but in my case, I've been notified. I also have an awardwallet membership and I also pro-actively check my reservations every couple of weeks or so. Unfortunately you have to keep track of your flights to minimize problems like this.
