In addition to great beaches, Anguilla has some of the best restaurants in the Caribbean, and it's easy to drive around and try all of them. As someone who loves food, I found this a nice "thing to do" in addition to relaxing at the hotel. We also heard there was a good local party scene certain nights of the week.
