Ditto on Beano's, Take the horse ride up (lots of fun!!) and van it back down.

In Vail, Take the lift up to the top and rent a bike to go downhill. It took my wife and I two hours the first time, we we're VERY scared. After that our rides down lasted 30 minutes, AWESOME!!!

I also know this is out of the way, but on our Rockies trip this year, we are seeing James Taylor at Red Rocks (SW of Denver).
The photos I've seen and others I've talked to who have seen a show @ Red Rocks say it is not to miss seeing anything there if you can.
