Officially you should be able to use the multicity booking option. Remember the flights you had when you got the deal you wanted and choose them again. Then just change the last flight to the next day. If that doesn't work you can try select a flight departing from LGW or LCY. If that all fails, it will be calling BA or (to save the booking fee) use an online TA like expedia.
And CWS would get mad if I did not point out that SVG or BGO are better (nicer) departure options IF they are similarly priced.
