In terms of the hard product, one thing to note is that at the moment, the AF long haul fleet includes 4 different models of seats!! (NEV2, NEV3, what we Flyertalkers call NEV4, and BEST). You might well have had one of the NEV2 which are positively horrible. NEV3 and NEV4 are still not great but much less bad. And I agree with you the wired headsets are complete nonsense, although for the record, they do disinfect them between every flights (and additionally provide you with ear protections that fit on the headset in the toiletry bag).
