Some of it sounds very unusual: I've never had a long haul ex-CDg without pre departure drink so is it possible they just missed you? Food ex-cdg is also typically good to very good at least for the main meal.
No warm nuts on af, it is just not really what people tend to have in France. However your pre meal drink comes with nuts, with Fauchon nibbles, and with an actual amuse Bouche which on many airlines would be reserved to F.
That said, yes all cabins are frankly outdated and prone to something not working and it seems that you had a very unusually inefficient crew working your flight. This is extremely rare but of course, as with every other airline in the world can happen. There is honestly no greater af tendency to forget special meals or return coats early, just sound like sheer bad luck.
