I've flown to SFO on Eva Premium Economy a couple of times and personally strongly prefer it over SQ economy due for the extended legroom as I'm pretty tall.
On the downside you may have a slightly longer transit in TPE compared to ICN or HKG and an inferior IFE, but overall I will stick with Eva until SQ get their premium economy on that route.
