The $75 is the SDC option. When the change flight button is there, that means there is a flight you can switch to - when it's not there, there isn't. Now, the UA website being the UA website is it's own thing, but I've never had an issue with the app. The kiosk is always a 100% sure way to avoid these issues, you just need to recheck in and hit flight options.

Depending on your situation, maybe there wasn't any of your fare open when you looked (were you on a deeper-discount economy?). The last couple times I checked about every hour, and availability came and went.
