My husband manages air traffic controllers ... it is FAA policy that tower and TRACON controllers refer to 757s as heavies. Center controllers, who work the high altitude sectors, generally do not refer to 757s as heavies because standard separation at higher altitudes take care of any potential wake turbulence issues.
