I use the Michelin green guides, if available. And the maps are the key to determining my route. I try to devise a route that is scenic and that gets within striking range of a couple of 2-star and 3-star attractions per day. Usually morning at one site, afternoon at another site. (And stopping at a countryside resort or inn for the leisurely lunch in between). Then overnight in a town large enough to have a superior hotel and a Relais & Chateaux-caliber restaurant.

For inns and countryside fine dining Relais & Chateaux cannot be beat IMO.
