So, I take it DEL counts as a transfer because its just a stopover and not my destination?

If I need to buy positioning flights in and out of DEN (to ORD or SFO, or wherever) to get the award, I will. However, if I'm going to try to get it all in one (if possible).

Yes that itinerary would be fine (although your counting is off - it's three transfers outbound); the segments become an issue when you have to cobble together a routing due to availability issues. Unfortunately, that's pretty common, especially with the domestic connectors.
