I'm pretty confident in guessing the service will be standard domestic F
Having flown this a few times in the past -- yes, with the loss of the Delta One designation for SEA-JFK flights, the three course meals, multiple wines, and the Tumi amenity pack are no more. However, the Westin bedding makes an appearance about half the time post-D1.
In August, there were two of the flat bed 757s going each way, with 739s taking the remaining two flights. Now it's down to one 757 per day. I booked a JFK-SEA flight in December, and it was a domestic 757 with 20+ normal F seats -- but I just checked and it is now a 738. There is a lot of flux on this route.
