I was curious about this recently also, and after Googling around about looking up tail numbers, it seems like flightradar24.com is a pretty good resource, although the ship number that will service a particular flight won't be known until the day or two before the actual flight.

Right - the magic would be lining up ship numbers with particular flights to know for sure, makes sense you wouldn't know 100% due to IRROPs, routing, etc... but maybe see a trend if the same 2-3 planes are on that route of late.
