Flights are often time constrained and also it would be awkward with customers all sitting so close to each other to do this. On longhaul flights a meal order is taken and prioritisation should takes place in a subtle way in the galley. It could not be subtle in any way on a very busy shorthaul flight even if you had time.
If at all possible, I try to ask Prem/GC/GGL discreetly what they'd like to eat whilst I'm doing a drinks round on SH. Sometimes, it's awkward, sometimes it works. It also very much depends on the loads and time available.
