Having stayed at all three hotels you mentioned, I must say I've always thought the Straits Kitchen has the best breakfast of them all.

The Straits Kitchen has a very wide array of Malaysian, Chinese and Indian options, which you definitely don't get at either the Conrad or Shangri-la. In fact, I've always found the Conrad HKG's breakfast to be weak on the Chinese side, considering it's in Hong Kong.
