Select economy there. You can still choose business for one direction and economy for the other when you're looking at the fare grid.

Do what you've already done. Then call and ask them to up-fare the S to W. I've done this successfully a few times.
I suppose you could also specify P,W for the fare classes in the search but I haven't tried that yet. That didn't work. Book and call.
