Doesn't mean DEN had/has no catering. I'd bet DEN has had catering for a long time.
Airlines have to put in orders in advance for this stuff - even if AA was willing to pay to re-cater the plane, it would have probably taken some time to get the food to the aircraft and they did not want to wait that long.
