DenverPlat: The mild climate in San Diego allows for outdoor malls - I'm guessing you were at Fashion Valley (Nordstrom/Neiman/Saks etc.) Another outdoor mall is Horton Plaza, right in the middle of downtown. Both of these complexes are somewhat unique in being outdoors AND multiple-level malls. Most other outdoor malls I've encountered (for example Century City Square in LA/Century City) are pretty much on one level (with parking underneath)
