I don't know if things have changed, but a while back I heard that if the card number was manually entered (instead of swiped), then an imprint of the card was supposed to be made as well. Assuming that rule is still in place, I don't see how EMV makes a difference. When manually entering a card, whether or not it or the merchant supports EMV doesn't make any difference.
