The oranges are fresh pressed by Do&Co at IST and put in transparent plastic bottles and refrigerated (I do not know if they flash pasteurize or not). This is basically the equivalent of your super premium "pressed in store" fresh juice. They do the same with the mint lemonade (but the lemon is mixed with water and sugar and then infused with the mint leaves) on most Middle Eastern airlines. TK also serves Ayran which I recommend to those who have never tasted it (a slightly salty and very refreshing yoghurt drink).
There is no doubt that the catering on TK and OS (and also on QR, EY, AZ, etc) is head and shoulders above BA, AF, LH, etc in J and in fact above BA F in quality and freshness
