Main difference is that they don't have that much choice and as many lines (Rejuvenate / Calm / Balance). Basically you could say it's a well put-together selection of Sodashi's best products, just not as extensive. However, what you get in the rooms (the Shampoo, Conditioner, Shower Gel and Body Lotion) are not made by Sodashi. They are usually natural and locally made. You can even buy them. I know Pulo's toiletries are available for sale, but only in 5 liter minimum sizes, costs around 35-40 USD if I recall correctly. Those prices aren't just happening with Sodashi. So I would guess the in-room amenities are rather natural and work very well, but not Sodashi standards. I'd love to see an ingredient label.
I find that most Aman soaps are extremely good and without chemicals, but the shampoo, shower gel etc, which as you say varies from Aman to Aman, does tend to contain chemicals, albeit less than most. I, too, wish they listed ingredients.
The Sodashi-made Spa line for Aman is actually quite different from Sodashi's main lines. It was custom-made for Aman. The Aman peppermint foot cream, for instance, is better than Sodashi's - probably because they perfected the formula when re-making it.
The brief from Aman to Sodashi was to create a very simple Spa line, with only a small number of products. Like you, I prefer the sophistication and range of Sodashi proper, but the Aman line is still one of my favourites.
In fact, Sodashi do make in-room amenities. Landmark Mandarin Oriental HK have them and George V puts them in the suites. Great to steal, especially the body lotion.
