Who will actually process my payment? Hyatt U.S. or a Hyatt company based in the location of the hotel I am booking.
In case I have a local CC from the same country of the Hyatt I am booking, should I use that one or my U.S. CC?

Unless its a prepaid rate - you're going to get charged by the hotel you're staying with. I've never seen it done any other way. You can technically use either card at booking and then pay with the card from your preferred country.
