The big advantage of the HK-Mainland two-number SIM is that you can receive calls and texts in HK (or elsewhere outside the Mainland) on your Mainland number. With a normal Mainland SIM this isn't possible unless you first register the card and make a non-refundable prepayment on the order of 500RMB to open overseas roaming.
