It's been said before, but I'll say again nobody has ever questioned my Israeli stamp in Dubai, I was questioned in Lebanon but ultimately given entry, and Jordan likewise didn't bat an eyelid. I think acceptance of Israeli stamps slowly becoming more widespread in both Gulf and Levant. Generally speaking, and I have no idea if this applies to you, but they never seemed to question my response of 'tourist' when they asked reason for visit.
I completely understand a boycott of a country on the grounds of their treatment of minorities (including homosexuals), many countries including the UAE have a questionable record on the subject. However, as a visiting gay man you should have no problems. Like most middle eastern countries, Public Displays of Affection are not welcome, of any description or gender.
