I have stayed at the DFW Hyatt twice this summer even though I only live about 5 miles from the airport. Once was for a convention and the other was just for the point promotion. It's nothing special but the rooms are nice and a little larger than the Sheraton's rooms. In addition to parking at the hotel which is comped (just get the front desk to validate your parking ticket) there is access to the hotel by airport train, Hyatt vans, and is walkable from Terminal C (old 3E). The hotel consists of twin towers, one on each side of the airport. They will almost always put you on the East side. In fact, they are planning to tear down the west tower and build a new Hyatt in the future international terminal. I'm only Platinum with Hyatt so I don't know what you will get as an ammenity. Note, there is no Regency Club at the hotel. If you will be traveling around the metroplex alot, the Sheraton will be a little more convenient. My father stays there often and as Platinum always gets upgraded to the "Butler" floor. The hotel is a little tired but so is the Hyatt. I have to agree with Quietlion, the Sheraton it does have a retro seventies feel to it and I'm not sure why the name Grand is used. Hope this helps.
