I stayed at the Hilton Opera in July and La Marais was very easy to get to by subway or if the weather is nice and you like to walk, it's a nice walk and you are near some other tourist attractions in La Marais like Centre Pompidou.
I really liked Open Café for dining. They also have a full bar and a fun happy hour with good drink prices but it's quiet enough you can hold a conversation and doesn't cater to just a young crowd. There was also another place I liked with outdoor dining across the street from Rage bar. You'll find almost every place in Paris is very gay friendly and in La Marais most of the restaurants are a mixed crowd.
Definitely check out Legay choc during the day. Gay owned bakery with some "interesting" shaped rolls. Make sure you get the address off their website and don't rely on apple maps app because it has their old address in the POI
