Easter Island is not an island full of 3+ star hotels and good restaurants are - almost logically - few and far between. If you're looking for a resort experience: there isn't any. Tripadvisor is a good source of information. I would recommend renting a car and drive around the island.

I stayed in a B&B kind of place with perfect location. Te'ora I believe it was called. Run by two women from NY and it was fun and comfy.

PS: I think that 3 days is more than enough. I had booked for a week but cut it short.
