I stayed at the Sheraton and it is a pretty bad location unless u want to drive everywhere. A friend stayed at the Hyatt and the Hilton and said they were very well appointed. Though his rates were a bit more pricey but the rooms were pretty decent in size and it was lots to do at the hotel so he didn't have to leave the hotel. Then again, Key West is rather small so there isn't really much to do.
