They have no way to know your MP details when you're buying on-board. Even if they used seat number to try and map there's no way to know you haven't changed seats with someone else.
Mileage Plus Dining doesn't have a problem connecting me transparently by just the use of my credit cards. Any credit cards.
I know MP Dining is a separate program and company, using different vendors, but I would guess they could replicate the process of it already exists.
