The minimum should be 60 min. But of course if you can have something like 90 min, it will be much more comfortable and less stress.
You will have passport control each time in CDG as this where you will enter and leave the Schengen area. On YUL-CDG-ARN, you will have also to go through security at CDG, but not on the return connection.
