No stopovers allowed on one-way rewards I'm afraid so you'll have to put together something with a return flight if you want that. You can always put together a dummy return (i.e., if your return dates are not certain and/or you can't find exactly what you want) though it will cost you the change fee ($90/ticket) For a return trip like that you can have two stopovers in addition to your destination.

It will take some legwork on your part and likely paying the fee ($30/ticket) to get an agent to book the flights, but worth it in the end.
