This sounds like the past folklore.
One can argue about service depending on nationality, like the French prefer French type of service, the British prefer British-type of service, etc... That is subjective.
But the hard product is more objective. The ten abreast Y sardine seating on AF 777s is bad compared to most US carriers. US carriers are making tons of money and invest. Their flat beds in J (some are better than others) are far superior to AF NEV seats which still make up over 80% of its fleet. TATL, I would fly US airlines in J (or 777 Y) and avoid AF and its Russian roulette.
