Something comparable to the Enclave is the GMC Acadia. Same platform, same size, basically the same car with different badging/interiors. It typically has a 2-2-3 seating arrangement, with two captain's chairs in the middle row. Since those middle rows slide forward/backward, it can give the third row a bit more room. I imagine it's the same on the Enclave.
Add to your list the Chevrolet Traverse and the extinct Saturn Outlook.
The middle-row seats do slide a few inches. However, in an SUV or crossover, the issue is not the horizontal distance between the seats, but the vertical distance from the seat to the floor.
You could have 8-feet of leg room, but if your feet are 6" below the seat, your knees are going to be in your throat.
With a minivan, at least the third row has decent vertical leg room so one can sit like a normal human being.
