See Step 1 of the K8 guide:
1) The cashier presses the Extras/K8 option on their screen and then presses K8 again. If they don’t see Extras or K8 on their screen (it depends on their login rights), they can scan an item for purchase and K8 will come up. Whether you purchase that item or the cashier voids it, K8 remains on the screen for them to press and continue with loading Redbird.
