they have a list of accomodations that may be helpful at this late date. My personal recommendation is the Casa Tra Noi. While it's a pilgrimage house it really is more like a small hotel. I've stayed there many times for conferences. It has a variety of guests. It's a 10 minute walk from St. Peter's. There is NO curfew. The meals are not fancy, but decent. There is a small grocery store on the street.
I've not stayed at the Domus Pacis in Rome, but the one in Assisi is very nice. Again, more of a hotel atmosphere. You don't have to walk around on tip toes
