If you want to be in the center of the old town, I recommend the Minyon Hotel or Hadrian's Gate hotel. The Minyon is really charming but rooms are quite small unless you book the loft on the top level. It also offered an excellent Turkish breakfast, the best of any Turkish hotel I've visited.
