Something I've not been able to understand if it's possible to do a route where the first leg puts me at LGW, but the second leg departs from LHR.

e.g. from AMS.
Outbound: AMS -> LGW -> (then the next day but <24 hours later) LHR -> LAX
Return: LAX -> LHR -> AMS

If this were possible, I understand I'd need to re-check luggage.

Is this kind of thing possible, and does it all depend on the ticketing types/rules for whatever combination of flights I find?
It is possible.
In either event, the fare construction will show AMS BA X/LON BA (insert TATL/domestic US segments here) LAX (insert fare basis and price in NUC.)
For obvious reasons, this is best done on the inbound.
