This is really the point, if I were the OP I wouldn't be planning my layover around UC clubs. Like them or not, they are pretty much the same in DEN and ORD, and not all that special. I'd probably look at other airport amenities, as well as other options for connections, especially if you arrive early or miss a connection.

DEN may be an overall nicer airport in my opinion, but ORD has Frontera Tortas, a good hot dog place, and generally way more flight options.
