You could wake up early, get the in-suite breakfast at the earliest time that they will deliver it (especially if you will not be there alone -- share it) and then get to Bouchon for brunch as late as possible (basically, lunch time)
Breakfast at Bouchon is pretty good too.
I am not sure about the Venetian but the Amex FHR rate at Palazzo includes free breakfast for 2 (in room), gives an upgrade and $100 of spa credit for circa $50 over the cheapest website price with no 2 night minimum stay.
