Michelin starred establishments won't be telling people to get up and go pay at a register... like in the UK, Canada, and Germany they'll have credit card readers they bring to the table.
Or their merchant provider/POS vendor provides a solution a la Square that downgrades all chip and PIN cards to chip and signature. There's no requirement for terminals here to actually support PIN, plus some/most? people who dine at such establishments aren't going to want the waitstaff standing there while they're paying.
