We could also connect in Toronto to an OS 767 but I don't see any reason to do that if the ORD flight remains available. Seems like an extra hassle to do a connection in an international city if you don't have to. Plus it's about a seven hour layover in Toronto and only about 2.5 hours in ORD.

Coming home we will try for the nonstop AMS-IAH in Saver Econ and pay up for E+. That would be the easiest, though it would be tempting to connect in FRA and fly a 787. I'd would like to avoid the extra connection when there's a perfectly good non stop.
Good choice, I find OS to be a good premium cabin experience.
